Salmonella bacteria may enter the bird via several routes. In practice, the main causes of transmission are introduction of new animals, contaminated water and feed systems, farm housing and inadequate biosecurity. The large number of possible routes by which Salmonella can be transferred to a poultry flock makes it very difficult to help to reduce Salmonella in the total feed-to-food chain.
One thing all transmission routes have in common is that Salmonella enters the bird via the beak. The crop is the organ where multiplication of Salmonella may easily occur and from where it may spread through the intestinal tract. Once in the intestines, Salmonella bacteria can attach to the enterocytes and start to colonise and multiply. Salmonella positive birds may develop into seeder birds that excrete high levels of Salmonella via the faeces, thereby transmitting it to other birds. Salmonella strains such as S. Enteritidis and S. Typhimurium may invade mucosal cells in the intestines, reach the lymphatic system and finally spread to different organs. In times of stress or immune suppression these Salmonella carrier animals may excrete high levels of Salmonella.
